Application

Dimethyl dicarbonate (DMDC) is a kind of preservative for fruit juice drinks, which is allowed to be used in China’s food additive standard (INS No. 242). At room temperature or even low temperature, Dimethyl dicarbonate (DMDC) has a strong ability to kill many contaminating bacteria in juice drinks, and its antiseptic effect is closely related to the modification and inactivation of key enzyme proteins in the bacteria by DMDC. Compared with other physical sterilization technologies, DMDC has the advantages of low cost, simple and safe operation, and does not affect the taste, smell and color of the product. It has become one of the hotspots in the research of emerging non-thermal sterilization technologies.

Dimethyl dicarbonate can be used in carbonated beverages, carbonated or non-carbonated juice beverages, tea beverages, isobaric beverages and many other beverages. In Europe, the United States and some other countries, dimethyl dicarbonate is approved to be widely used in various beverages. Important authorities such as the World Health Organization’s Joint Expert Committee on Food Additives (JECFA), the Scientific Committee for Food of EEC (SCF) and the U.S. Food and Drug Administration (FDA) have issued documents proving the safety of the application of dimethyl dicarbonate.
