Physical and Chemical Properties

Stevioside has a melting point of approximately 198°C and a boiling point of 963.3°C. It is soluble in water, ethanol, and methanol, but insoluble in organic solvents such as benzene, ethers, and chloroform. Stevioside is stable in acid and salt solutions and has good heat resistance, making it suitable for baking and boiling processes.

Applications
